Tasting Notes
Appearance
Golden, clear — Cellarmaker's West Coast house style present from Dank Williams through Citra Lite and consistent here. A white head with good retention. Looks clean and confident in the can or the glass.
Aroma
Earthy Mosaic notes lead — the 2021 vintage crop bringing its characteristic tropical fruit alongside a more pronounced earthy, slightly dank quality that comes with Mosaic at its most expressive. The Mosaic Cryo amplifies everything without adding harshness — tropical fruit, mango, a sweet berry spritz quality, and that Mosaic dankness at doubled intensity.
Palate
West Coast IPA structure with Mosaic doing all the flavor work. The earthy Mosaic notes carry through the middle alongside the tropical fruit, the Cryo addition giving the palate an oily hop richness that standard pellet additions can't achieve. A more assertive bitter streak develops as the beer opens, as one careful field reviewer notes — meaning this benefits from the first few minutes in the glass, opening up as it warms slightly.
Finish
Sweet berry spritz on the finish — the 2021 Mosaic character fading into a berry-adjacent sweetness rather than a purely resinous close. Medium length, clean, with the Mosaic Cryo dankness lingering just behind.
The Verdict
Cellarmaker time-traveling through Mosaic crop years to find the FIRE — 2021 Mosaic and Mosaic Cryo on a West Coast IPA base, earthy tropical dankness, sweet berry finish, best enjoyed fresh from the can or on draft at Hop Asylum. The hunt paid off.
