Tasting Notes
Appearance
Extra pale golden — lighter than most West Coast Pilsners, the crackery Pilsner malt base delivering a luminous, almost straw-pale glow. Brilliantly clear with fine carbonation and a white head. Looks deceptively simple before the first sniff changes everything.
Aroma
Gobs of Mosaic and Citra in all forms — and you can tell. Citra's dank citrus oil leads, orange and grapefruit and citrus pith arriving immediately. Mosaic comes in behind it with Riesling grape, mango, and passionfruit — a wine-like tropical complexity that no other hop variety produces. The crackery Pilsner malt sits quietly underneath, keeping the whole thing honest as a pilsner.
Palate
Light-bodied, crushable, and dry. The hop character does all the work — dank citrus oil and tropical fruit in layers, mango and pineapple building through the middle, Mosaic's Riesling grape quality adding unexpected wine-like depth on the back half. The crackery malt provides structure without sweetness.
Finish
Dry, tropical, and clean. The citrus oil and passionfruit fade together into a refreshingly complete close. Nothing lingers too long. The pilsner base drying the finish completely, making the next sip as automatic as August.
The Verdict
Alvarado Street's annual cover of Timbo Pils — gobs of Mosaic and Citra in all forms on a crackery Pilsner malt base, 5.8% ABV, dank, tropical, dry, and crushable. A brewery that already makes one of the best German Pilsners in California turning their hand to the West Coast Pilsner format and delivering exactly what #timboweek demands.
